THE GUY
Tim VanDragt
Tim’s journey with coffee began in 2006 at a chocolate and coffee shop, and by 2009 he was self-teaching his way into roasting—starting with a humble popcorn popper. After spending a decade in the beer industry, where he honed his skills in flavor profiling and tasting, Tim returned to coffee in 2023 with a renewed passion. In 2024, he launched Dejima Coffee, driven by the belief that coffee is a complex, ever-changing drink that everyone knows but few truly understand.
THE PROCESS

We start by assessing your taste preferences to understand your ideal flavor profile.

Then we select coffee beans based on your tastes and the unique characteristics of their growing conditions.

Finally, we roast in small batches using our proprietary profiling method, then bag and deliver your coffee for pickup.
